Chunky Vegetable Platter
500g vegetables of your choice – patti pans, sweet potatoes, gem squash, pumpkin, baby potatoes, carrots, marrow
1 Tbsp brown sugar
1 Tbsp lemon pepper
1 Tbsp garlic butter salt to taste
Salt to taste
½ cup fresh cream
Method:
Wash veggies and cut those that are big or whole into chunks. Leave sweet potatoes, baby potatoes, gem squash and marrow unpeeled. Place veggies in an ovenproof casserole Mix together rest of the ingredients and pour over the vegetables Cover casserole with foil and bake at 180*C for 15 to 20 minutes, then remove foil and bake uncovered for a further 10 to 15 minutes or until all the veggies are very tender.
